deviled potatoes
Here’s another awesome recipe idea from Jen! If you love deviled eggs and have your own additions that you love, feel free to add them to the filling and make this your own!
INGREDIENTS
small red potatoes (think egg sized)
vegan mayo
chopped green olives (or relish if you like it)
dijon mustard
fresh dill, chopped
salt & pepper
garnish: paprika & chopped green olive
MAKE IT
Boil your potatoes whole until tender- about 20 minutes.
Let them cool slightly, then slice in half and scoop out the centers. Leave some potato inside the skins.
Mash all your scooped potatoes together with fresh dill, vegan mayo, chopped green olive (or relish), a squirt of dijon mustard plus some salt & pepper to taste.
Sprinkle your scooped out potatoes with a bit of salt & pepper, then fill them up with the mixture you just made.
Garnish with chopped green olive and a sprinkle of paprika!
