cookies & cream truffles
I’ve been making this recipe for years and I feel like it’s a classic. 3 ingredients, no measuring… what else could you want from a dessert recipe? I’ve seen this method floating around on the internet and have NO clue who to credit with coming up with it, but this is absolutely a vegan staple recipe to have in your back pocket. Bring them to dinner parties (when it’s safe) or potlucks or serve them up to your honey for Valentine’s Day. I love these because they’re super customizable & you can get super creative. I’ll give you the base recipe and then some variations!
INGREDIENTS
30 oreo cookies (this is about 1 container minus a few for snacking)
8 oz vegan cream cheese, softened (i love tofutti brand for this and just use one container, no measuring!)
1 bag (9 oz) vegan chocolate chips (I like enjoy life brand dark chocolate)
MAKE IT
Crush up your oreo cookies nice and fine. You can use a food processor or you can pop them in a plastic bag and smash them with a rolling pin.
In a bowl, mix together softened cream cheese and oreo cumbs until well combined. Pop the mixture into the fridge or freezer for a few minutes so it firms up a bit- it’s way easier to work with.
Roll your mixture into 1-inch balls and place them on a parchment lined baking sheet. Return them to the freezer while you melt your chocolate chips.
Melt your chips over a double boiler or in a microwave. If using the microwave make sure you stop it every 30 seconds and give it a stir.
Coat each truffle ball with chocolate by quickly dropping it into the melted chocolate, rolling it around and carefully lifting it out with a fork. You can tap the fork on the side of the chocolate bowl to remove the excess.
Put your truffles back on the cookie sheet and top with whatever additional things you’d like (see ideas below).
I like to keep these in the freezer so the chocolate doesn’t melt. Remove them about 15 minutes before you’d like to serve and the centers will be nice and soft.
FUN VARIATIONS
There are so many ways to change up the flavors of these truffles. You can make a bunch of different types to create your own valentine candy box, or make them a seasonal treat!
use different flavored oreos!
use different kinds of chocolate coating!
toppings! when chocolate coating is still warm, sprinkle with chopped nuts, chunky sea salt, crushed peppermint candies, sprinkles, more crushed oreos… let your imagination run wild.
Here are three of my favorite variations.
Chocolate Covered Pretzel- replace a few of your crushed oreos with crushed pretzels. Then top with chunky sea salt or a little piece of broken pretzel.
Peppermint- add a few drops of peppermint extract to your truffle mixture (or use mint oreos). Then add crushed peppermint to the top of each.
Chocolate Strawberry- add some crushed freeze dried strawberries to your truffle mixture. Then top each with a small slice of freeze dried strawberry or crush and roll the truffle into the strawberry crumbs.
