oven-fried potatoes

INGREDIENTS
potatoes of choice (Jen uses yukon’s and cuts up enough to fill 2 cookie sheets because…teenagers)
bell peppers
onions
jalapenos
extra virgin olive oil
salt & pepper
MAKE IT
Prep your veggies. Cut them all roughly the same size so they cook evenly. You can leave out the peppers if you want or don’t have any. I usually do. I think I’ve even thrown a sweet potato and a parsnip in there. I put everything in two sheet pans, pour some EVOO on them, salt + pepper too, mix them up really good with my hands so everything is coated. Then bake for about 20-30 minutes. At about the halfway point I give everything a shake.
That’s it!! They taste like they’ve been fried but you don’t have to do that while you’re making everything else.
