the apple something pie

I call this the apple “Something” pie because I change up the flavor every time I make it. The filling is made with apples and jam. The jam component means I can have apple peach pie, or apple blueberry pie, or apple strawberry pie… the possibilities are endless. It’s super easy to put together and can be ready to go into the oven by the time it’s pre-heated. I use a store bought crust, but if you have a favorite pie dough recipe feel free to do that too. I also use literally any type of apples I have on hand. I know certain types are supposed to be better for pies but I don’t discriminate. As soon as I have 3 or 4 apples, it’s pie time.
INGREDIENTS
1 pie crust (I like the Marie Callender’s because it’s vegan)
Pie Filling:
3-4 medium sized apples - cored, peeled & sliced
1/4 cup powdered sugar (Wholesome brand is vegan!)
1/4 cup jam (any flavor that you like! My favorites are peach mango or strawberry)
sprinkle of cinnamon
splash of lemon juice
Oat-y Crumb Topping:
3 Tbsp vegan (or regular) butter, melted (you can also use a mild flavored olive oil)
2 Tbsp AP flour
1/4 cup brown sugar (not packed)
3/4 cup oats
sprinkle of cinnamon
pinch of salt
MAKE IT!
Preheat oven to 350°F
*I don’t have a microwave so I usually put my butter in a mug and pop it in the oven while it pre-heats*
In a large bowl combine filling ingredients- apples, lemon juice, jam, & powdered sugar. Add a little sprinkle of cinnamon if you like it.
In a small bowl combine topping ingredients-oats, melted butter, brown sugar, flour, a pinch of salt and more cinnamon.
Get your pie crust ready to be filled. Homemade is cool. Store bought is cool. Whatever works for you.
Toss in the filling and spread into an even layer. Cover with the crumble topping. Pop the whole thing on a sheet tray if you’re afraid of some bubbling juices spilling over (I usually do that just in case cuz I hate cleaning my oven).
Bake for 30-40 minutes on the middle rack. Just take a look and pull it out if the topping starts to get too brown.
Let cool completely and then EAT IT.
